Parmesan Rigatoni with Sausage, Red Onions and Parsley

Ingredients
1 lb rigatoni (or other short pasta)
1 lb hot Italian sausage
2 red onions, halved and sliced 1/4" thick
1 can (14.5 oz) reduced-sodium chicken broth
1/2 c freshly grated Parmesan cheese
3 c packed Italian parsley leaves (fresh)
Directions
  1. Cook pasta in accordance with package directions.  Drain and return to pot.
  2. Heat large, nonstick skillet over medium-high heat.  Breaking apart with a wooden spoon, cook suasge until browned.
  3. Reduce heat to medium and add onions.  Cook, stirring occassionally, until onions are caramelized and sausge is fully cooked (4-6 minutes).  Add chicken broth and simmer for 4 minutes.
  4. Add sausage mixture to drained pasta.  Add parsley and Parmesan, tossing to combine.
